SexyMoxieMama’s Hearty Crock Pot Beef Stew

I have a special treat for you today. As the weather starts to shift and get colder, now is when I like warm and hearty food that can be made in large batches and reheated later. When I eat this stew I am reminded of cold winters in St. Louis as a little kid when my mom would make this on the stove to simmer all day.

This is a hearty beef stew recipe that is reminiscent of my mother’s beef stew but for the crock pot. Place all the ingredients in the crock pot, give it a quick stir, and leave it to cook all day. Believe me, you and your family will not be disappointed with this stew. Leftovers can be frozen or refrigerated to enjoy on another day.

Ingredients

2 lbs beef stew meat, cut into 1 inch pieces
1/2 teaspoon pepper
1/2 teaspoons salt
1 tbsp minced garlic
1 tbsp steak seasoning
1 teaspoon Worcestershire sauce
½ teaspoon ground red pepper (optional)
1 bay leaf
4 unpeeled potatoes, diced
2 large carrots, peeled and sliced (may substitute for small bag of baby carrots)
2 large stalks celery, sliced
1 onions, chopped
2 cups peas, frozen
1-28 oz can crushed tomatoes

Directions

  1. Place meat in crock pot.
  2. Add potatoes, carrots, celery, onion, frozen peas, and garlic
  3. Mix salt, pepper, steak seasoning, and red pepper and pour over meat and vegetables
  4. Stir to coat meat and vegetables
  5. Add remaining ingredients and stir to mix well
  6. Cover and cook on low for 10-12 hours or high for 4-6 hours
  7. Stir stew thoroughly before serving
  8. Serve hot with biscuits or corn bread (optional)

Yields: 6 Servings
